I love to cook and share my creations with others I also think it’s nice for people to see a sample of recipes from certain cookbooks. With a large volume of vegetarian (more correctly, omnivorous but with no actual flesh products) and vegan cookbooks available, it’s sometimes time-consuming to decide what is best for a certain person and their needs. |

| Back from Cancun |

I just returned from an all-inclusive Cancun 7-day resort trip.* The weather was perfect and I almost had enough food, except I would have liked to have more dark greens.* I ate tons of papaya, pineapple, honeydew, kiwi, bananas, cantelope, mango, leaf lettuce, red lettuce, avocado, tomatoes, jicama, lime, carrots, and cucumber.
Here is the happy and relaxed couple on the busride to the airport.*

| Hoison-Glazed Tofu Stuffed with Shiitake Mushrooms |

From The Vegetarian Meat & Potatoes Cookbook, the stuffing has shiitakes, garlic, green onions, and ginger, sauteed in peanut oil.* I am baking the stuffed tofu as opposed to sauteeing it.* I hope it turns out to be a good meal for a special someone’s return home!

I’m so lucky to have such raw-friendly friends.* The party will have some gazpachos, too!
Spinach & arugula salad with jalapeno, scallions, and apple (will be tossed when I get there)
Fruit Salad
Kale salad w/ carrots (nuts and hemp checked because the dressing has hemp oil and Brazil nuts).
